Title: smoking a whole duck

Does someone have already tried to smoke a whole duck.

I have a nice one in the freezer and I was thinking of smoking it soon.

Can someone share is recipe.

I've never done a duck in the Bradley, but I've cooked a lot of ducks and geese, both domestic farm raised and wild.  There is a BIG difference between the domestic and the wild.  Smoke will probably be a great addition to any duck recipe, just respect the difference between domestic and wild, and then within the wild ranks know what kind of duck you have and how to approach it.

I posted a thread a few weeks back about the same thing.  I even bought the duck, I just got to busy to spend the time to do it right so it's still in the freezer. Keep me posted on what you decide to do and the results.  I'm hoping I can get around to it some weekend soon but i'm booked for at least the next month. :'(
I thought about doing the spatchcock thing?  Anyone got an idea on this?
I wonder if my boss would mind if I brought the smoker to work?  Hmmmm.

So here's what I think I will do. I took some ideas from Car54 recipe.

I will apply a bit of my chicken rub on the duck and inside the cavity, also 2-3 clove of garlic inside the bird. I'll smoke the duck for 2 hours with apple in the OBS on the hightest temperature possible & with vent wide open.

After the 2 hours of smoke, I will transfer it to the oven at 325F on a rack in a pan for 2 hours. Like in Car54 recipe, I will turn the duck every hours & drain the excess of fat in the pan. After that, I'll raise the oven to 350F for the last hour to crisp the skin.

I think that should do it! What you guys think?
