Title: Turkey in brine too long?
Post by: bflosmoke on September 22, 2010, 05:23:35 PM
Hi all. I have had a turkey breast in the brine from the recipe site for approx 24 hrs. I had an unexpected trip to the hospitol with my uncle today and just got home. It is raining pretty hard and the earliest I can smoke is Tomorrow afternoon. Is that too long? should I rinse it asap? just looking for advice.
Thanks
BFLO

Good question.... I think you should take it out and rinse it off and put it in the fridge until you can smoke it.

I know this is way to late. Like Smokeville I would take it out of the brine, and if I was sure I would be smoking it the next day I would let it air dry (uncovered) in the refrigerator overnight.

I hope everything turn out well, from your hospital trip.
