Title: Hickory Slim Jims
Post by: NePaSmoKer on September 26, 2010, 06:57:51 AM
After yesterdays error  :D  :D

I got some hickory smokehouse style slim jims going. Stuffed into natural sheep casings which are close to 17-19mm in size.

With the small diameter of the casings i had to add another hanger to the 6 rack.

Have my PID working from start 140* to finish at 175*....................NO FAT-OUT DAY  :D  :D

A good sausage smoking day is not having a fat-out  ;D

These came out pretty good. Blooming now for 2 hours then fridge and cut up tomorrow. The ones on the dowl got done faster and are already starting to darken.

Pens;

Here is a link the the Sausage Ingredient I did some time ago. The links within the page do not work, since the upgrade. You will need to scroll down until you come to the section Trehalose. You can purchase Trehalose from LEM.

Sausage Ingredients (http://www.susanminor.org/forums/showthread.php?674-SAUSAGE-INGREDIENTS)

I just saw the other post that NePas answered your question. You should check out the link anyway. Trehalose is a very interesting ingredient.
