Went to see my veggie guy today.....  he smokes, cans , pickles, makes sausage etc ,  so we talk about food.  From time to time I bring him little snacks -   smoked almonds & pistachios, choc. zucchini cake, pulled pork,  ICB entries....

and this is what I came home with today......

he said he put too much fat in this batch but it still tastes good.  I'm gonna go find out ;D

Asking what type would have been a good idea.  I'll have to go buy some more veggies and ask.   Definitely dry cured.   

I haven't had a chance to break it open yet.  I did have a piece earlier in the summer but I don't remember the flavor... I do remember it was good.

I was thinking dry cured and just by looks it kind of resembles a Spanish Chorizo.
