Title: Smoked Dark & Spicy Eggs

Did up a couple qts of these eggs. Smoked the hard boiled and peeled eggs with 4 pucks of hickory (cold smoke)

1½ cups cider vinegar
½ cup water
1 tablespoon dark brown sugar
2 teaspoons granulated sugar
1 teaspoon mixed pickling spice
¼ teaspoon liquid smoke or hickory smoke salt (both opt) if you dont want to cold smoke.
2 teaspoons salt

In this area, a delicacy is pickled quail eggs.  I'll bet those you made are great.  Thanks for the post,  I am going to try them.

A couple of questions.

Did you hot seal them, cold seal them or just jar them without sealing?

How long do you age them, if any, to get the best flavor?

With that title, I was expecting to see some of them chocolate eggs that Carolyn has.

Just made em lastnight. I did the eggs, smoked em and brought the pickling liquid to a boil, Put 12 eggs in the jars and fill with liquid to the top and sealed, then into the fridge.

Here is another recipe i am going to do for a friend that wants 2 dozen.


Smoked sweet and sour eggs
1½ cups apple cider
½ cup cider vinegar
1 package (12 oz.) red cinnamon candy. Red hots
1 tablespoon mixed pickling spice
2 teaspoons salt
1 teaspoon garlic salt

NOTE: Smoking is opt on the eggs

Boil the above except candy. Add candy to the bottom of the container, add eggs and pour warm liquid over eggs, fill to the top, seal and fridge.
