Let me know what you think of those State Fair sauces.  Our local Gander Mountain sells them.

My personal opinion, I don't like any of there sauces, but an overwhelming population in New York does. The Chicken Sauce is close in flavor to the Cornell Chicken Style (http://www.susanminor.org/forums/forumdisplay.php?89-Pork) marinade/sauce.

The Spiedie (speedy) sauce, is generally used to marinate cubes of meat, usually beef, lamb and pork, but chicken is sometimes used. Then you put the cubed meat on skewers and grill. Then the grilled meat is served on a submarine roll or Italian bread. These types of sandwiches are big hits at local fairs. If you google Spiedie recipes you will find more detailed instructions.
