Thanks for all of you first for the many many hints, tips, recipes, methods, etc. etc. on this forum. Wow. I haven't been on a forum that has been so helpful like this in my lifetime. Thanks to you all :)
Anyways.. While out on holidays this past summer, my sister and brother-in-law brought some Tony Roma's beef ribs for supper one day.. I loved them!! Delicious.. I found them to taste better than pork ribs, but that's just me. ;) I decided to try my own smoked beef ribs. I went and bought 4 racks of beef ribs and I froze one rack for another time, but cooked the rest of them... Last night, I spent a while trying to remove the membrane from the ribs and when it was finally done, I applied a Memphis Style rub to it. I put the rubbed ribs in the fridge overnight, and woke up early this morning to start the ribs so that we could eat them for lunch at 1pm.
Here's the rubbed ribs.. I didn't apply much rub.. just a thin coat:

I then smoked for 2 hours and 20minutes @ 220F using a combination of Apple and Hickory.. (more apple than hickory).
I then splashed apple juice (nice heavy dose) and foiled them and put them back in the smoker for 3 hours.. Removed the foil and threw the ribs on the rack and let it cook for the final hour, saucing them a couple times til the finish...
Here's the results.. they were so tender and juicy.. I just love my DBS4.. :)

I'd say you knock them right out of the ball park. Very NICE!
Just one thing, I don't ever remembering removing the
membrane on beef ribs. I do on pork. Hmmmm

I wasn't sure about removing the membrane either, but I followed jimguy's post here: http://forum.bradleysmoker.com/index.php?topic=4321.0 Sounded like it was a good idea, so I attempted too.. I had a heck of a time trying to do it with the knife/spoon and paper towel though.. It just didn't give that easily.. I also found that the ribs I bought had a lot of excess fat on them so I trimmed a lot of it off too.. I was a bit worried that maybe I took too much off, but after I ate them, they were just fine...
What ever you did, do it again!

i really like beef ribs every now and then. Those look like a mighty fine rack.
You did a good job on the ribs. I never remove the membrane from beef ribs. It is almost impossible to get off. I like to score the membrane with a sharp knife.
As FLB, I cant' get good beef ribs in New York. They trim them too close to the bone. I have to go into Connecticut to get some decent ones. :-[
Thanks guys! I will try leaving the membrane on the 4th rack I have in the freezer.... They were so good, that I think I may just smoke up that last rack next weekend :)
