Chompin' at the bit to get my first smoke under my belt! I've been on this post for days and I can't decide what to try first. I'm leaning toward chicken because it sounds like it is a little more forgiving. I'd take any last minute suggestions.

Welcome to the Forum SoCalBuilder. Here's a few things I have learned so far : Vent WIDE Open, 250ºF, I like to use Apple, Pecan, Maple, or Cheery for chicken. I use 2 hours of smoke.
Thanks Smoker - That will be my baseline. Figure I'll keep it simple with olive oil, salt and pepper and maybe a little granulated garlic. I'm anxious to taste the smoke ;D

I just bought my DBS three or 4 days ago and haven't really slept yet! I keep taking 4 hour naps and am on my 4th batch of smoked coho and king salmon. I truly am loving how easy the bradley makes smoking, and also the amount of information these fellow smokers share!
Enjoy the smoke and always have a pint/scotch in hand while smoking ;)
