Title: Tale of Six Fatties

Well not really a tale - but it was something else I did on my recent bachelor weekend.  I was in a joyous mood and wanted to treat my flyfishing buddies during our weekly liars fe.....er confab.  They are simple one track minded guys and pork fat gets their attention.  There are times I wish I had my gall bladder back and this weekend was one of those times!!!!!  Pork Fat!!!!!

All were made of Rudy Farms Regular Seasoning sausage
First up was Porter Cheese, green onion and mushroom

Next up is the Figgin' Fatty but this time figs with Dubliner cheese (BTW - not quite as good as with sharp cheddar)

Next comes Pesto, Artichoke bottoms, and Goat cheese

Next was a surprising second place favorite - Dried Tomato Pesto, Roasted red peppers, Ripe whole olives, and finely grate Parmesan

Breakfast-in-Hand fatty - scrambled eggs, crumbled bacon, tater tots, and cheddar cheese

This one was the favorite - went fastest - Cheddar cheese, scrambled eggs, mexican chorizo, jalapenos

The Caney McMuffins mentioned in another thread - were a smash hit.

Left was garlicky, green chili, chorizo, sharp cheddar drop biscuits.  Right was can biscuits topped with chorizo, green chili, and cheddar

Mad my first fried avocado - ala NePas.  Stuffed with chorizo and sharp cheddar.

Holy Cow.  All looks amazing.  I have never even thought about doing a fatty with scrambled eggs.

2 eggs per fatty is about right if you are going to add anything else.  I like to take them outta the skillet while somewhat creamy.  They will finish setting in the fatty and not be dry and crumbly.

You was definitely on a roll there my friend. Everything looks great. I would ask about putting a bacon weave on the fatties but I believe there was a cabin under construction.

Either they are having their get together at the local fly shop or Caneyscud
has one heck of a man room. Nice looking fatties also. I would eat them ;)

H E Double hockey sticks No!  It was hard enough not to get gook on the camera the entire weekend between the fatties, the Bacon Heart Attack Hotel, the Caney McMuffins, my confit ICB turn in and one or two things that I haven't gotten around to posting yet.  When she got home Sunday, the wife type person noticed some of the doorknobs were kinda slick like!

Oh honey, by the way, I had to work on the car this weekend, I might have gotten a little greasy.
