Made three racks last night. Sam's had none and had to buy the peppers at local supermarket. $3.99 per lb. Ouch. Made three racks. I can't believe the amount of cheese and bacon along with pulled pork these buggers hold. The results are beyond outstanding.
I smoked with hickory for three hours, vents 3/4 open. Peppers are tender. I removed the toothpicks while warm, (sampled two) and refrigerated on a tray. Will reheat this evening for the guys at a billiards party. Didn't have time for pictures but they are absolutly beautiful. Bacon nice and crisp and a nice color. (Not at all turd like)
Warning! Very time consuming. Not heart healthy. Cardioligists and PETA members probably will not sample these.

I'm going to mix the meat and cheese, leave the peppers whole (remove seeds and membrane still) and pipe the meant and cheese mixture into the whole peppers.

They are basically Jalepeno Poppers that aer smoked wrapped in Bacon. They are very tasty. Depending on what the filling and Jalepeno ouy se.
I did some recently that had Proscuito Ham and cream cheese. Wrappend in Bacon and smoked. Very good. Will try some again, awaiting some better looking Jalepeno's. May just use cream cheese or some thing different. Somethng lean.
I jsut did some mixing the buffalo meat and cream cheese--saved quite a bit of time and didn't seem to lose anything in the taste department . . .
