Got up early to do some tex mex sticks.

Ground the meat 85/15 GB ground through the medium plate.

SO

After i stuff and twist, I go to the garage to pre heat the smoker. I come back and the twisted sticks are all un twisted......AHHHH Ya wanna play 6 year old do ya  :D..........Here meet Mr Butcher twine  :D  ;D

I've done that as well, twisting the sticks does not work too well for me. So I have been tying them. Like you said, now untwist!  ;D

I love the lazy Susan for rolling your sticks up on [loved it] Is the corn holder to prick the air out of the casings?? I think my stuffer bell will eliminate that.
Looks good so far. My wife spotted your coffee packet tree and says you must be running on too much caffeine.

Yeah thats my 29 cent casing tool  :D

I have a major coffee habit.....Hmmmmm maybe thats why i only sleep 5-6 hrs  :D


I got the sticks hanging to bloom for a couple hours.

They look really good!! Do they smell like burnt fingers?? Have you found the Bubba Puck yet?

What did you stuff these in. sheep gut or synthetic casings? They look good. Is this your own blend of spices?

Those are 19mm smoked collagen casings. I normally make my own mix but this batch was a pack of bass pro uncle bucks mix for 5 lbs. I added 1.5 T of smoked paprika and 4.5 T of ECA

The finished product looks killer Nepas. Its pooring rain here pretty good so I think my Land Jaegars will have to wait till next weekend. Went to the Butcher this mornin and got all the meat but I think I'll have to freeze it. The new Bradley is still in the box in the Garage but I'm thinkin about busting it open. I'm having a 13' X 13' Aluminum awning put up on one of my small decks this week so no more rain excuses after that.
