Title: Smoking and Non-smoking -DAY 2
Post by: GusRobin on October 09, 2010, 08:02:57 AM
Today's adventure starts out with cold smoking and then some hot smoking,
First up is cheese, ketchup, and paprika

1lb Colby Monterey Jack, 2 lbs extra sharp chedder, 1 lb pepper jack, 1 lb gouda
72 oz ketchup and 1 jar paprika

It was during the prep for this smoke that a scary thing happened to me. Previously I had searched the forum for something to cold smoke besides cheese and came across threads on smoking ketchup and paprika. So I put it on my list of things to smoke during the next cold smoke. As I looked at the above picture I took, I realized that I don't even like ketchup! So I became worried that if I am smoking stuff I don't even like I must be addicted and probably need to go into rehab. This really had me concerned until I realized that I could use the ketchup when I make the BBQ sauce tomorrow. Smoked ketchup will add good flavor. So now that I am no longer worried I think I will get out the vodka and make a Bloody Mary. (It is too early to drink JD and/or beer).

Here is a pic of the cold smoke set-up.

Here is the Bradley loaded and smokin'. It seemed to be running a bit hot so I added a tray of ice to keep the temp down.

Later this afternoon I will switch to hot smoking and throw in a chuck roast and some asparagus. I'll also be making some spagetti sauce in between the football games. More pics to come later, now its bloody mary time.

You can TRY denial but that done work with me ....... You are addicted.

And that is a good thing. No rehab needed, just smoke more.

I missed Day 1 .... I will go and find it.

Ketchup!  Great idea...   I was not-so-gently reminded last night that I need to make some smoked ketchup.  Tonight might be a good night for it - and some salt... (gonna be a hot one today - it's already in the mid-80s)

I joined you with a Bloody Mary this morning Gus; great picker upper.

It all really looks good.

It's supposed to be in the 40's here tonight so the cheese goes in early tomorrow morning - time for another Bloody Mary.

WOW  :o :o what a great looking smoking station!!  Been wanting to replace my table and I think your design is exactly what I would love to build for myself.  Would you happen to have some plans/designs/more pics for that setup and if so would you be willing to share?

I know I've told you this before but I love the hell out of the smokehouse of yours. I was telling CRG the other night that here I own a woodworking company and I have mine setting on top of two plastic shelf units I purchased at Home Depot.

I will have to break down and design something.

Don't know. After I started it I realized that I couldn't think of anything that I like with ketchup on it.  ??? So I am going to put it in the BBQ sauce that I will make tomorrow.

Done for the day

Spaghetti sauce cooked and canned

Chuck roast done and going into FTC
(http://i1047.photobucket.com/albums/b476/gusrobin/october%209/IMG_0456.jpg)

A plate of chuck roast. Only made corn on the cob as a side and ate it before I took the pic.

Tomorrow I plan to make and can some BBQ sauce, and maybe make some lamb stew with the left over lamb. I was going to make some ribs but I am the only one home and I think I made too much this weekend. ;D ;D
Well done for the day, now I will go drown my sorrows as I mourn the Tide losing to South Carolina.
