Decided to expand my repertoire to include sausage making. Today I ordered this.

It was on sale and with shipping it cost me $104. Tomorrow I was going to get Kutas' book and read up on it. If I enjoy it I will probably buy a separate stuffer but for now I'll use the stuffer attachment on the grinder.
So once I learn enough to be dangerous, I'll probably be asking all you experts for help. Be gentle this will be my first time. ::)
The Cabelas grinder is a good entry level grinder. However to stuff with it decently you will need a cyclone needle stuffer attachment.
BUT
STC has a 5 lb stuffer in the box :D :D

Gus just remember this when your getting frustrated stuffing your first batch. There is a reason they call it a grinder and not a stuffer.

Yeah I figured it would be more difficult than with a stuffer. But I wanted to start slow before investing in a stuffer.
Nuttin wrong with starting slow. After stuffing 20 or more pounds using the grinder stuffer I think you will soon see why we recommend getting a stuffer. ;D

The Cabelas stuffer is a decent entry level stuffer for the price. Note that is whats referred to as a pressure stuffer. Meaning if your adding chunk meat to the throat you have to apply pressure with the stomper so the auger can cycle through the blade and plate. If your meat is in strips the auger will catch the strip without any pressure from the stomper.
You will have located inside the stomper, stuffing tubes and a couple of stuffing plates. These plates you use in place of the blade and metal plate when you stuff. The blade and metal plate are only needed for grinding, not when stuffing.
On the back of the auger is a plastic gear. Here is the weak part of the stuffer when you force the grind or stuffing. You will (or should) have an extra gear in the box just in case.

It is nice to see NEPA using a low end machine tool...gives the rest of us hope that we do not have to be rich to smoke some of the exotics ;) :)
