Title: Old Smokehouse Style Slim Jims

Yesterday i did a 5 lb batch of old smokehouse style slim jims. I wanted to flatten them some like Jaegers but cant find my jaeger press. So i had to improvise with some cookie sheets and some weight overnight in the fridge.

Got the slim jims out early this morning to room temp, have hot water in the pan, pre heated 6 rack to 130* for 1.5 hours. Hanging no smoke for 1 hour.

Almost half way there. Gots 15 more pounds to do before we go on vacation  ;D
