Title: 1st attempt sausage sticks

I am going to try some sausage sticks and am wondering what type of meat do you use.i ordered the Eldons kit if that make a difference.

You can either use straight ground beef or a mixture of venison-pork. Roughly 70-30 or 80-20.

Nice thing about sticks is that you can use almost any type of meat you wish. Most of my sticks are 90-10 pork.

I've made them for years and use venision.   I mix 70% venison and 30% 50/50 pork.

thanks for the help, I never thought about using pork. Beef rump roast is on sale this week so I may try that for first time.
