Title: Land Jaeger question

I have a Cabelas Land Jaegaer seasoning and cure kit. The directions state I can optionally add Binder flour to keep product moist. Do you all add Binder flour and Can I get it at the grocery store? Thanks for any help  ;D

I will leave this question for Nepas. But if I had to guess I would think powdered buttermilk could possibly be used as a binder here to help retain moisture. I dont make Landjaegers so I am just guessing here.

I personally like my Landjaeger on the dry side.
I have not made it but when I go to the deli
to get some I always get the stuff that is on
the dry side, the deli knows that I like the drier
stuff so they make sure that they do not give
me the freshly made stuff. Just an observation.

Cool, I was hopin you were gonna tell me i did not have to use Binder flour, Im only doin five pounds so i think I'll skip it this time. The selling point of this kit was " everthing you need" then you get it in the mail and they add options.  :D

I would skip the binder flour.  Mike up in Canada has tried this kit a couple of times, maybe he will chime in.  I have plans to make a batch very soon, let us know how it turns out.

The Cabelas Smokehouse kits are made and packaged by PS Seasoinings. The Landjaeger is a good kit but it was lacking something for me so i added 1/2 T of mace to the 5 pound batch which made it better.
