Here is 5 of 15 pounds doing this weekend.

My dry mix for 5 pounds of hickory flavor with 1 level tsp cure #1 added (kinda outta my norm to do it)  ;D

Ok now the KA mixer question. Paddle or Hook?  You decide, I know which one i like  ;D


Notice how the paddle keeps the meat clumped in a ball  :-\ yuck

Now look at the hook. Clear to me which is best.

Looking at your results I may try the dough hook, though I get better results then you had when you used the paddle. Looks like you got a good primary bind. How long did you have to mix it for?

I went for 2 mins on the mix.

I gotta learn how to make sausages..
