Title: Bone In Turkey Breast, Cooking time?
Post by: thirtydaZe on October 17, 2010, 09:38:28 AM
have a 3.18 lb turkey breast, been marinating since friday afternoon.

i'm comfortable with my process and arrangements for the day, but just curious on what you think for cook times, and IT.

165ish?

Yep!   Probably 3-4 hours - maybe less.  Run your box at 250-ish.  I take mine to around 161 and FTC for a while. (it'll be 165+ while it sits)

Recently smoked an 8.32 lb bone in turkey breast at 250º (PID), w/3 hours of 1/1 split of Pecan/Apple and pulled it at IT of 161º and FTC.  Took 4.5 hours to cook.

Smoked a 6.4 lb bone in turkey breast using same procedures as above and it took only 3 hours to cook and reach IT of 161º plus FTC.

Be interested to see how long it takes for a 3.18 lb breast.  Probably at least 2+ hours?

i either misread it, or it was marked wrong.  this bird was way bigger than a 3.18.

went to the store for some veggies, and happened past the meat section.  they had a 3.79 bone in turkey breast that was half what i paid, and half the size.

put 2 hours of apple on this one, but currently have it in he oven as it's 57 outside, and the IT was only 146.

let me mention, i had 2 chicken thighs, and 4 buffalo wings.  put some Cookies all purpose rub and cayenne on the wings, best thing to come out of the smoker thus far!  i'm sill saying wow.
