Here's some Salmon I caught on the Trinity River a week prior.
18 hours in my Aunts Special Brine Recipe.
After drying w/ paper towel, left to air-dry for and hour. Cover in Fresh Cracked Black Pepper
Smoke 2 hrs @205 over Apple (80%) Alder (10%) and Hickory (10%)

I'm going to try fish one of these days... Salmon is too rich for the Mrs, so I might try some smoked halibut or ahi tuna or marlin or something like that.

That Salmon looks good. I don't have a good brine recipe for hot smoked fish. I'm with Squirt, if you care to share.
my smoker does not seem to be heating up above 110 F and is not hot smoking my salmon, any tips? :'(

Is the element glowing read? It sounds like you are only getting heat from the Smoke generator.

Thanks for the love guys. I hope you can understand, I made a promiss 20 years ago to never tell her brine recipe to anyone. I love sharing when I can, but this is a family recipe. I dont mean to be a jerk or anything. It is what it is. My brother, myself and one other person know it. And thats how she wants it.
It is simple though. A certain liquid, salt and brown sugar.
