The kids hammered my supply of bacon a couple of weekends ago. So I made another batch. Not a lot of photo's

In the smoker catching the last bits of smoke before turning up the heat.

This morning all sliced up ready for breakfast tomorrow morning. Probably have to make another batch next week!

My stomach started to growl as I scrolled to the final pic. I definitely need to give this a try. Guess it's time to learn to cure! Thanks for the visual inspiration.

That would be another thread!!! Soon to be started upon my return from the meeting which is scheduled for precisely 2ish give or take a half hour either way.

DAMN!!  Son you weren't kidding about the bacon were you!    Now that's the kinda bacon the Big Man intended us to eat!! 

If PETA thinks I'll choose veggies over that then they really need help!  ;D

So when you going to pass out samples???   You know, I want to change the  "no pictures = no cook"  to you have to send out for "taste test or no cook!"  ;D

Tenpoint, I will start to roll the smoke in the morning on the twenty pounds of bellies, I have been curing for seven days using your recipe. Ten pounds I added two ounce of Rum to just to test the flavor. Can't wait to taste and post pictures.

Heck even on a rainy cool day it works.

Caney Let me know if I need to make a call to the locker plant. The butcher on Tuesdays they ask I order by the Friday before. Last batch was $2.89 a pound.

Caney... Not likely it will work... Maybe too complicated...
But, I will be driving the middle distance between y'all (4hrs) for Turkey day --- Springfield to Paducah.
Already have a load of PELLETS goin' on the "bus"...

Ya never know.  Enough teamwork... ??
