Getting ready to chronical my first brisket and I found these pics on the Nikon. I ended up using a modified 10.5 method. Persnickety GFI and PID ignorance led to a frustrating day,I had no idea where temperatures started or stopped. But lo and behold the ribs came out fine. I think you would consider them overdone as they literally slid off the bone. Still nice and moist and they disappeared fast.
