Title: Green Chili Pork Butt
Post by: stillsmoking on October 28, 2010, 07:09:38 PM
Hey all, been a while since I have posted.  Had a very busy summer putting buildings on top of mountains and seeing some water damage repaired on the home front.  Having said that doing some pork butt something or another tonight.  No pictures but took some marinated/smoked pork butt out of the freezer tonight and put it in a pot with some Hatch garlic green chili enchilada sauce to simmer for a couple of hours.  Adding to that some black beans with sauteed onions, jalapenos and tomatoes.  Will put all of that on some warmed up corn tortillas with raw spinach and sliced tomatoes, possibly fried egg on top.  I am barely able to avoid slobber and embarassment as we prepare for dinner.  Fall is fully upon us here and I will try to contribute and read more as I have the time to participate.  Sure do appreciate all the posts from everyone new and old as it contributes to my education.

I have a freezr full of Hatch chiles.  Thinking of thawing some and rubbing on a butt prior to smoking.
