I'm thinking when you take 'em out of the brine I might season 'em up a little with your favorite spice rub.  Maybe just a light dust of your favorite cajun rub?

Thats what I was thinking. That way the rub will stick to em while they is drying and sucking up the smoke flavoring

There is a smoked pumpkin seed recipe on the recipe site. I haven't tried it, but it did get good reviews.

They turned out awesome !! The wife had here way with the worcestershire and salt and i had my way with the hickory smoke. Probably 2 hours as hot as the Bradley would go and about 1 hour 20 minutes of smoke. Some got cooked a little more than others but they are a awesome blend after I put them in a bowl. None actually got burnt, but it was about 5 minutes away.

Had to tilt the tray

Finally got my Primo and Bradley under cover  :)

Nice!  I've got that same grill pan...  Never thought about shoehorning it in the Bradley, though.   ;)

"shoeHorning" now thats funny, The wife got that pan at Bed bath and beyond. Im gonna take that pan to work and cut the handles off with my die grinder or flatten them out on the pan press, then it will fit perfect in the bradley.

Smoked pumpkin seeds are a FANTASTIC idea! Glad someone wrote about it. I might have to try that after Thanksgiving dinner.
