First off i would like to thank everyone on here however especially SouthernSmoked (Mark) who recipe and help I used throughout my first smoke. My name is Rob and I just purchased a 4 rack digital smoker. For my first attempt I decided to cook a 6 pound beef brisket. Basically following Marks recipe I smoked for 5 hours using a combination of hickory and Jim Beam oak. Then continued cooking for a total of 12 hours till reaching an IT if 203. After a 2 hour sit all i can say is WOW and I am hooked! This was better than I could have ever dreamed.

Thanks everyone for all the great comments! It was a lot of fun cooking it and having it turn out perfect was even better. I'm not sure whats next yet. Either salmon or pork guess it will be whatever looks best at the store ;D
