Title: First shot at cheese

Been checking out posts on cheese,  Yesterday it was 16F so today I sparked up the smoker have thrown  some pepper jack ,Colby and mild cheddar in. I am going to use a combo of apple and hickory for tow hrs.  would post pictures but not sure where camera is.

Sounds good. Keep the vent wide open while smoking. After it is smoked, allow to cool to room temp then wrap with plastic and put in a ziplok bag for a couple weeks. Good Eats.  :D
