I need a "sweet teriyaki jerky" recipe. I have tried some of my own concoctions but wasn't overly happy. So what you guys got.

When I used to make jerky in the dehydrator, I used to try some of the terriyaki bottled sauce from the oriental aisle at the market. I never found one that didn't leave a lingering 'licked the bottom of the ashtray' taste. I look forward to whatever you come up with.

Well here is what I came up with so far. (pics to follow). I agree that the Teriyaki sauces from the groc store are not what I am looking for so I started with it and then added.

One 290ml (1 1/2) cups bottle of Kikkoman Teriyaki grilling & basting sauce
with honey and pineapple (long name).
300 gr. (1 cup) honey
300 gr. (1 cup) pineapple juice

Put into sauce pan and bring to a boil stirring constantly. Lower heat to medium and let reduce to your desired thickness (stirring occasionally). Mine would run off the spoon and then drip as opposed to running right off without drips. It will thick as it cools. Cool sauce down to at least room temp so as not to cook the meat when poured into the bag. Place the meat in a large ziplock and massage thoroughly. let marinade over night.

I haven't put it in the smoker yet as I have my ribs in there now so when they come out after 3 hours of smoke and go into the oven, I will start to smoke the jerky. Then we will see how this turns out.

Sorry to chime in so late on this one Quarlow but hear is the recipe I get requested to repeat the most and it simulates a Teriyaki to me.

The following is for 2 lbs.

1/3 C Soy Sauce
2 TBSP Worcestershire Sauce
1/2 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Ground Ginger
1 tsp Salt
1/4 tsp Pepper
1 TbSP Granulated (white)Sugar
1/2 tsp liquid smoke.

I have used beef, venison, and goose with this recipe. All are great with the goose topping the list. I marinate 24-48 hours mixing at least twice to redistribute marinade.

FYI I haven't had the chance to use the Bradley on jerky yet I have always used a dehydrator.  I am sure I will omit the liquid smoke for natural smoke with the next batch.

Here is my Teriyaki recipe


Teriyaki Jerky

Enough for about 1 pound of meat.

2/3 cup Kikkoman Teriyaki Marinade
1 Tbsp Brown Sugar
1/4 tsp Black Pepper
1 tsp Onion Powder
1/2 tsp Garlic Powder
1 tsp Salt
1 Tbsp Corn Syrup
1/2 Cup of Orange Juice (No Pulp)
1 tsp Soy Sauce
1 tsp Liquid Smoke
1/4 Cup Water


Marinade over night and then dehydrate.  Never tried it on the smoker.

Well my sweet Teriyaki jerky was a success I can't post pics till I get my comp working. I am on my kids right now, But I am only allotted a few minutes then I have to get off. Damn kids. I did however find out something about marinading with CT. I did half my batch with CT and found that cause I let it marinade for about 12 hours it dried the meat out to much. So the next time I will only marinade with the CT for about 6 hrs.

Glad to hear the jerky was a success and look forward to the pics. DO you suppose the CT partially 'cooked' the jerky because of the vinegar in it?
