Saw in a post that Punchlock had bought like a case of ham stockings. I PMd him about a swap for a few, and he said sure. He PMd me later that a box was en route, along with a 'small bottle' of Maple Syrup he makes himself.
This arrived yesterday.. (first clue - box was HEAVY)

My buddy had a place in Quebec that had a lot of maples on it so he naturally had to make syrup. He tapped the trees and collected the juice and boiled it down. It came out awesome. To bad he sold the place and moved to Ottawa. So lets see some pic's from punch. Is that bottle frozen?

Yes. He said to freeze it if I wasn't going to use it for a while... It had the consistency of whiskey when I opened the box.

Well I have been searching for pictures that I know I have but I can only find a few.

I tap about three hundred trees at right now but that tends to grow each season. I use three converted fuel oil hot water tanks as evaporators. Last season was good and I processed over 50 gallons of syrup. It takes about 40-45 gallons to make one gallon of syrup. Needless to say there is always maple syrup around the house.

You luck dog. I know it is a lot of work but it gives you a hobby in the dead of, and the benefit is you got what we pay huge for. And I can't stand to be without maple syrup in the house. I use it all the time. In fact I just made some Johnsonville sausages, braised in a skillet then added a cup of water and a 1/4 cup of maple syrup. They are awesome like that.
I am speechless. That is just awesome to see syrup still made like that. Fantastic!

Well I went to check my mailbox this morning got me a little pink card that required me to sign for a package from Canada. I opene it up on the kitchen table. I found a very nice bottle of Homemade Maple Syrup from Punchlock. I just wanted to say THANK-YOU Thank-You very much. I would post a picture of the bottle to prove this did happen. BUT..... I don't remember anything like that at all. I bought a bottle of pure syrup for making bacon.

And Just like that **POOF** the bottle was gone. Time to implement plan B. Miss Rachel will tell me where Mom hides the bottle and if she wants to make more BACON she needs to tell me where it is!!
