Post by: NePaSmoKer on November 18, 2010, 02:42:18 AM
Got 5 lbs of bambi strips for my neighbor. She wanted some strip jerky instead of sticks or sausage  ;D

I hated it worse when I did it the second time than the first time!  D'OH!

... and I thought this post was an ad for a more "erotic" form of entertainment (although the jerky looks pretty "effin'" good).

No comments needed about the gutter in which my mind resides - that's very old news.

My buddy actually just got some venison and wants to borrow my Bradley to make jerky. I told him, I never really had an interest in making jerky so I wasnt sure what to do. Do you have any tips for him? How many hours and at what temp do you recommend? What flavor wood and how many pucks would you recommend? Thanks for your help

Use any kind of pucks. I find the Hickory is the best for venison. Just marinate and start the jerky around 150* taking it up to 175* in 10* increments. Done when it bends or when its to your liking.  Note: The venison is pretty lean, If you do a wet marinade add 2 T of canola oil to the marinade.

If it breaks or turns white you cooked it a tad to long.

Thanks, I will pass the details off to my buddy. He is definitely doing a wet marinade. I will let him know about the canola oil.
