Title: More snack stix's

The 5 pound batch I made last weekend is gone.  I checked my windows and doors and I see no evidence that anyone broke in.  Just me and my wife at home and she swears she only had 1 or 6  ;D.

Using Greg's spicy recipe again.  Talked to Nepas for some advise and he suggested I try using buttermilk instead of water.  So I followed his advise and used 3/4 cups of buttermilk and did not add any ECA in this batch.  In my haste to get this mixed up I forgot to add the 2 tsp of sugar.  Looked at the buttermilk label and it has 9g of sugar so maybe all will not be lost.  Will make another 5 pounds tomorrow.

Out of Hickory until the UPS man arrives on Monday so I am using 2 hours of Oak.

What size of casing is that? Sheep 3/4??

I am using clear 19mm collagen casing.  I have never tried sheep casings but I think I might order some.  The collagen casing are really easy to use and they turn out very nice for snack stixs.
