Title: Summer sausage success
Post by: ronbeaux on November 23, 2010, 02:29:57 PM
I used a recipe from the 'Home Sausage Making' book and only added a few extra touches on the seasoning. Smoked it in the OBS using the step up method in the other Rytek book and it worked great. I opened the fridge today and all 3 lbs are gone!!!!!!!!

Ron that looks Delish!! I do not have the best monitor so I can not tell if there is markings on your knife.....is it a Global.....if yes how do you like it?

Well that was weird?? I tried to reply and crashed the server.

Yes. That's the Global 5 1/2" vegetable knife. I freaking love it! I keep it sharp with a ceramic rod that is really smooth but rarely have to use it. Maybe once a month or so. BE CAREFUL! It is scary sharp!

I have really good forged F Dick knives and love them, but they are a heavy European style. The Global is light weight and easy for chopping veggies(like it was designed) and holds a better edge than my others.

I'm debating on getting a chef knife from Global but I'm torn on which size. I like the 8" range in the heavier knives, but I'm thinking a Global at 10" would handle like a smaller knife and still be light weight.

I'm looking hard at this one but want to handle it first.
