The thing at the top of the pic that looks lke a big brisket is actually an 8 pound Kurobuta pork belly. Also received Wagyu beef franks, Kurobuta pork brats and chorizo. Expertly packaged. All contents still frozen solid thanks to 11 of those black things you see in the pic. It was all tucked away in a thick walled styrofoam cooler. That will come in handy for future FTC's.
I talked to them at SRF about the belly and they said "well, it's a little leaner than most folks use to make bacon but they will work just fine." Leaner? It's got a fat cap on it like you can't believe. It came from a Berkshire pig. Berkshires don't know the word "lean". Skin is already removed too.
