Ok here is something different ;D
Doing corn husk wrapped pepperoni mini's............................Pay attention now :D
Cure added to 1/2 cup water. Mix until dissolved.

Pepperoni mix added to cure water. Mix well.

2 1/2 pounds of 80/20 GB. Mix added to meat.

Pre soaked corn husks. Soaked in warm water.

Roll small chubs so they fit in the husk while you roll them.

Tie the ends with strips of corn husk making sure the meat does not squeeze from the ends.

I cut the long ends from the husks. Now ready for some Apple smoke. Going in at 160*

They turned out better than i thought. Didnt pick up any corn flavor.
