Title: Edam?

Anyone ever smoked edam?  I had a ball and decided to see what how it would do.  Since these are about 2#.  I did some in larger slices and cubed some for snacks.  Put them in the top of the smoker while cold-smoking my turkey before frying it.  Ran for about 1.5 hours with pecan and then into vac-bags and to the back of the fridge.  Reckon these will be ready for Christmas?  Thanks!

I never smoked it or even tried it before.  ???

Classic Dutch cheese somewhat similar to Gouda.  It is a tad drier and less creamy than Gouda of the same age, hence it doesn't flow as easily when melted.  Should smoke wonderfully well.
