OK. Dumb question. Why use those casings? Is it for surface area smoke penetration?

When I was a kid and we went to the square head butcher we used to call it "blumen" (flower) salami.
I always thought it tasted better than the square one :D :D

This batch peeled like in 15 seconds, worked good.

Got them halved and vac sealed.

OK....I read this thread many times and I failed to see anything about soaking ....what did I miss?  Did they get soaked after the smoke?  If you guys had communications by phone ...we are out of the loop.....Heck I never knew I was in the loop.  ;D

Yup soak em just like fibrous or synthetic.

The bags are zip vac bags from Cabelas. 100x better than the FS bags

You'll have to call for prices.

Or I can tell you that a single 80mm x 49 feet is $54 and change and the Shipping is in the neighborhood of $12 Fedex When it comes it looks like a giant collagen casing, then you make your own lengths from it.

In your estimation how long of a length would you use to stuff a lb or two.?

A one pound chub I would use 10 inches and a 2 pound chub I would use a 20 inch casing These are pretty good sized so it is probably holding about 1/2 pound more than that but the 10 and 20 inch lengths are what I make out of it. They fit in the Bradley 4 rack better at those lengths.

The 20 inch length fit nice in the 6racker with some space to spare.

54 + 12 + 6 (to re-ship) = 72 / 2 = 36 for approx 25 ft.

I will split an order with someone if they want to.

Hey Sonny,

I knew I had seen some online - your buddies at Allied Kenco have them --  enough to do 5 1/4 lb.  for 4.61    not sure if they are the same diameter

nepas, someone did pm me and ask to split the 49 ft.

I am calling this morn and maybe can buy a longer length for less money.

After I gather the info, I will call you before I order.
