I had my heart set on making spicey snack sticks today. I checked the UPS tracking number and it said it was in my town and in transist so I went ahead and mixed everything up anticipating arrival of my casings and small stuffing tube. NOT! Didn't happen. Checked the tracking number again and it said 'tendered to local post office.' So now BOTH the mailman and UPS left me hanging.

Everything back in the fridge until tomorrow...........

Bummer Ron.  I'm not sure who's worse - FedEx, UPS or USPS.  I've been through a couple of these "hand offs".  The tracking info is pretty much useless.

That bites, If you ordered the 3/8" SS stuffing tube from Lem Have your heat Gun ready to get the sticker off the tube, then I had to use wd40 to get the sticky stuff off and wash it in soap and water, gotta hate those stickers. Can't wait to see them stix  :)

Is that not the truth.....holy cow I tried to pull that label off and said.....HONEY.....I need help....can you get this off I have to go to the store.  I came home and she had it all nice and shiny.  I did not ask how she did it.  I'm thinking she used the mommy spit.  You know that will take anything of anything.  Lucky the kids still have their faces.   ;D

I ordered it from Sausage Maker Inc. It comes with three. Small, medium, and large.

Ron,
Why not just run the mix through the smallest tube you have and make some skinless snack stixs. Just run them onto some wax paper so the paper will slide on the counter. Then transfer to your racks and smoke them up. Not sure if you have the frog mats or not but you should have no problem doing them like that if your in a pinch.

Mine only came with one tube and it is almost too big to stab hog casings on.

That was embarrassing when Momma pulled out a "Used" tissue

out of the bottom of her purse and spit on it and wash your face

Hurraww!! The tubes and the casing showed up on the back of a camel today and I put it to use. NOW it's going to be a long night!

They went in at 110 and I'm holding it for an hour before kicking on the smoke. Maple and hickory mix.

I remember about twenty years ago My father-in-law needed to tie up a roast. I watched as he went out in the garage and took his knife and cut the roll of string off his youngest daughters kite. He then proceeded to go in the kitchen and tie up his roast, I asked him " are you sure your suppose to use that polyester string for that" his response was "It's Butchers kite string"  ;D Roast turned out great  :)

Glad to see ya got all you supplies today Ron.  Those sticks look great, and I always rack my sausage as well.
Sometimes I'll hang larger summers for the smoke but then I'll rack them to finish, haven't hand any complaints yet ;)
Looking forward to seeing the final product.

I poked one. From what I could tell it was 138 internal. They look really really red! I jacked up the temp to the final setting of 180 and by the time the OBS gets there they should be ready to bloom.

Gimme another hour.

OK. They temped out at 152 and sorta looked like they were done so I pulled them. I hope they don't suck.

OK. I ordered the small stuffing tube to fit the 5lb stuffer. I got the 19mm coligen casings and they wouldn't slide over the tube while scrunched up. I had to thread it on by hand and that meant that I had to do this about 9 times since I could only smash so much on there.

I noticed in another thread that the whole coligen casing slipped right onto the tube. Where do you get one of those??

You waited a whole 30 minutes to taste one! That's longer than I waited on my first batch!!

The tube I have is from Smokeitall's website Big John T makes them.
