We went to the store and got 2 loins and a butt for a pretty good deal.

So now the fun starts ! ;D
I am going to us tender quik ,brown suger and molasses to cure .
SWEET deal!
There is room for imagination when doing Canadian, I still like the touch of onion and garlic in Hab's mix. I do use some pure Maple Syrup when I can afford it, but for now its a Maple powder Brown Sugar mix. But you really cannot mess it up. The only time I was not happy with my results, I did not give it a proper drying time. It still tasted ok but did not give me the golden finish I have had in the past. Gotta have that nice tacky touch to it before it goes into the Bradley, or it will not brown well or accept the smoke as well.
I got the cure started.

Mmmmmm CB!
I agree with Smokin Soon in that (1) I like a little onion and garlic in there and (2) it's hard to screw up.
Well out and ready for smoke! ;D
