Title: Inspired by caney- how scary is that?

So I'm having my first cup of coffee and there's Caney's "happy wife chili" post.  It's early, my brain hasn't really started up yet, but damn if I'm not inspired.  I can't possibly match his prose but I've got some leftover brisket and pernil and can make some chili that SWMBO and I will both like.

First toasted some ancho, guajillo, and unnamed peppers for the "slurry" (or "puree" if you prefer)...

Then browned a bunch of chopped pernil and brisket (point)...

... deglazed the pot with broth and cooked up the peppers...

... before putting them in the blender with "a bunch of stuff that goes good in chili..."

Back to the pot with onions, garlic, and jalapeno (and some oregano)...

then "set" the slurry...

... and add stock, meat, and some other "stuff that goes good in chili."  Then cook for a couple of hours...

... and take out a bunch for me before adding the pinto beans (already cooked separately) that SWMBO thinks belong in chili...

What a great three dish dinner (one dish with both chili & beans for SWMBO and one each with beans and chili separate for me).  Life remains totally excellent - thanks Caney.

Apparently you have a better pest control company and didn't have to ward off any unexpected pest while cooking your chili like Caney did. But maybe the little buggers aren't indigenous to the islands? It's 24 degs here right now so I'm up for a bowl!  ;D

Otto (the Orkin man) did his bimonthly service this morning so feral beans weren't a problem.

I'm not quite sure which one of us took that shot directly but I'm guessing we both have some teabag bruises.

No dissing intended...was just confusing for me....but i did conjure with some teabags to un-confuse myself!!  ;D
