Title: Watch how you trim your casing!!

I made a 5# batch of Summer Sausage today and it is hanging to bloom right now. If you happen to notice on the bottom of the one casing I happened to trim it a little too close to the hog ring. Thus the ring slid off and I got lucky and didn't have a pile of goo in the bottom of the Bradley. So don't trim the casing right up next to the ring. This has been a public service announcement from me to you.
BTW these casing are about the size of a ritz cracker so it will be slice and eat no extra cutting needed, cool huh?

Sounds like you need a smaller hog ring.  ;D

I was using a 3/8 ring.

Yep they was done in the Bradley. I had to tie a knot in the string to shorten it up, put my wood spacers in to raise it up, and I had to pull my V-tray out. I hung them in front by the door.

As soon as my head stops pounding. Making sausage wasn't the only thing I was doing last night. Put a pretty good hurting on a 30 pack and a gallon of homemade wine.

You were lucky those look good i hope the hang over goes over quick thats why i dont drink often it taste good but then i feel it for days after
