Title: Eldon summer sausage

I just made some summer sausage (my first) using the eldon packet, some high melt cheese and some jalapenos.  The meat I used was a mix of some deer I killed a few weeks ago, a bison I killed last year, some pork butt and some country rib (ie. whatever fattyish pork was on sale) and a few packets of elk/bacon burger I got from a friend.  Basically I emptied out the freezer(it was due)

Anyway, I'm EXTREMELY pleased with the results.
My question is:  is the recipe for summer sausage that is published on their webpage the same thing as what they sell in packets?   I would love to do a batch "from scratch" but I would like it to turn out this well again...

I think they are. I know Eldon and Karen. Both are master sausage makers.
