Title: I got a new Obs and a 6.5lb chicken!

I just had to exchange my Obs today due to the SG heating plate failing after 2 smokes. So I'm going to do a 6lb chicken tomorrow. I'm not one for cooking, I only grill the basics so I'm not to knowledgeable on what spices work well together. But I have a new found love for smoking and cooking. (My wife likes it to :D) So a little help would be great.  I'm looking for a recipe that would be rich earthy and robust almost midevil. Something a Knight or Viking would have eaten. If that makes any sense.

Take a look at this recipe. Maybe even use a little seasoning spice on the bird for a little more umph.
