I've been flip-flopping my belly and canadian bacon, and I noticed the loin has shrunk. It didn't quite fit in the 1/2 sheet pan when I put it in the fridge on Saturday, now it fits just fine. Is this the cure doing it's magic, and drawing the moisture out of the meat?
Yep, it will shrink a bit during the curing stage. Sounds like the magic is happening.
Yes - Moisture out = cure and flavor in.
Because its cold, thats my story and I'm stickin to it. ;D ;D

Cold here too. And very icy this morning. I backed MrsSTC's car out of the garage before I left, and when she went to leave for school an hour later, it was sitting out in the middle of the street. Oops... :o
