Title: Jerky Chunks

Hey everyone, LTNP.  Been away for the summer and getting back into my routine here.  Hope everyone is well and the Holidays are cheerful.  

So, I found these nifty beef cubes on sale between 1/2" and 1"  that were extra lean and looked like they work make some awesome jerky chunks.  I loaded up with about 7 lbs and used I believe NePas' Soy Ginger recipe.  Due to the thickness I let then stay 2 days instead of one, hopefully a smart move.

I have never smoked chunks before, I was gonna smoke em for 2 hours at 150*, then bump it up 10 degrees after the smoke and possible another 10 if it needs it.  ANy other suggestions?

Well I did em and they came out great.

CORRECTION: It was Big John T's Soy Ginger recipe.
