Title: Smoking Jerky

Simple question...Getting ramped up tonight for seasoning and smoking my first batch of jerky in my new Bradley tomorrow morning.  Should I rotate the racks (top to bottom and front to back) while actually smoking the meat OR just after the smoke is done and the drying process begins?

Yes rotate them throughout the process
