It was a very long weekend getting the new smoker going and then doing 25lbs of summer sausage, 25lbs of venison bacon, 10lbs of Greg's spicy snack sticks, 20 lbs of fresh venison italian brats, and 6lbs of pork sausage.
Had a couple of small problems, melted two SSR's (I didn't have a heatsink and tried running it without one...big mistake), and one element wasn't quite enough so I added a second. Running a contactor controlled by my PLC and 6" touchscreen and all is good now. I still have to finish the wiring and hang my electrical enclosure but at least I'm smoking.
Also Thank you CRG for sending me the 5" hole saw, worked perfect. Let me know if you want me to ship it back to you or send it on to the next custom smoker being built.

I did some adjustment on my big smoker and gonna do a small batch in it maybe Christmas day.
I'll adjust the loads up till I find it capacity.
I hope it at least 50 lbs.

Those look great! I recently started getting into making sausage, but it is very difficult to find casings in my area, not to mention finding cure!

I have one 1500 watt element, came from an old Brinkman I had before the Bradley. The other element is the one that came with it, I think it was 1300 or 1400 watts. I have a 220V line in my garage, 40 amps per leg. So I am using one leg for each element (my original circuit ran both elements on one leg with no problem, split them off when I went to the contactor). With only the original element it took a little over an hour to get to 200, with both elements it gets to 200 in 15 minutes. I have a 220V 5500 watt element on standby in case I need more power :)
