Heading to the lease on Monday for some hunting and a break from work. Going to smoke a 12 lb brisket and a 6 lb butt to take. Rub on the brisket is a combo of the English Prime Rib and pot roast rubs from Penzy's that OU812 sent me in the exchange. Brining the butt then may or may not use Dizzy Pig rub after brining. Any suggestions to rub or not after brining?

As far as puttin a rub on that butt I would have to ask how salty is the butt going to be when its outta the brine.
I would use a rub thats low in salt but has some kick to it.

Never brined a butt, but agree with OU812 about the caution of the salt and I agree with him on that brisket!!! ;D
The brine has 55mg of sodium per tbs which equates to 880mg for the cup of brine I used. Mixed with three cups of water. Maybe I will sprinkle just a tad of the Northwoods Fire by Penzy
Thats the one I'd use too, makes a great bark.
Brined for about 6 hours. Sprinkled some Northwoods Fire on. Butt and brisket in the smoker. Pecan is all I have left so doing 8 hours. I did 8 hours of oak on the two butts and brisket a few weekends back and it was just right.

Wish I would have seen this earlier.
I have used the SweetWater Brine and they are nice.
I strained the brine and used the spices as a rub.
But you will be fine. You just can't hurt a Butt. ;D
I knew you had and started to call you for a little advice..but figured just like you said..its a butt, I can't hurt it. Can't find my dang strainer or I would have done that!
Had to put the meat in the oven about 8 this morning before the big rain hit. Just pulled the brisket at 187*. All wrapped up tight in the cooler now. Saved thatjuice for the reheat while hunting.

"Sweet Pea" is what we called Taby till she was about 8 or 9
Then it became Taby cause Sweet Pea didnt sound cool out on the ball fields. ::)

While everyone was wrapping gifts and getting ready for church, I sliced the brisket and pulled the butt and sealed to take hunting. Brisket was very juicy. The rub had a good flavor but could use a little kick. Couldn't tell if the brine really did anything for the butt, but the Northwoods Fire rub kicks it!
