Title: Bacon Question
Post by: schneep on December 23, 2010, 03:58:32 PM
Ok, I'm going to try bacon, but want it to be cured without nitrates or msg, so which cure do I use?

I plan on using a recipe I found here by Caribou.

I am not sure the answer but I do remember a post on this very question, if I can find it I will post the answer.  If I remember right it can be done.

Let me know if you find it too.  I do enjoy home made bacon...  Wife almost strangled me last time since I came home with 30 pounds of pork belly.  Then again she didn't complain when we started eating it... :)

Good discussion about three weeks ago in this thread (http://forum.bradleysmoker.com/index.php?topic=19432.0).  Short answer, yes you can, and there are a number of options.
