Title: Turkey cooking time?
Post by: Customstox on December 23, 2010, 09:41:25 PM
I opened an early Christmas present, a Bradley 6 rack digital smoker and I am going to smoke a 12.5 # turkey for Chrismas dinner.  Any suggestions for cooking time and temperature.   I was  thinking about getting up early and putting it in around 5 am and hoping to eat around 1 or 2 pm.   Thanks in advance.    I saw a post on here where the op was using a "half pan" to catch the drippings.  Do the dripping make good gravy?

Here's a 12lb turkey that I did recently http://forum.bradleysmoker.com/index.php?topic=19110.msg233403#msg233403 (http://forum.bradleysmoker.com/index.php?topic=19110.msg233403#msg233403)  You'll not that I did not keep it in the smoker.  I smoked it for 3 hours and then transferred it to a 350º oven for about 2 hours till the thickest part of the breast reached 160 - 165º.  Total time was about 5 hours.  I have not cooked a whole gobbler only in the OBS yet.
