Ok, so this is actually attempt #2, but it's my first big attempt. And thanks to all of you with the words of wisdom. Heres some pics:

Thanks for all the helpful hints guys, the hot water bath worked PERFECT! and to think, I was skeptical.....

Well, I do this as a side gig to make some extra spending $$$, so I gotta do enough to make it worth my while when I do it! I would prefer to do 50lb batches, but I would rather start smaller and get good at it before I go all in and go bust for a few hundred dollars in supplies!

Hi Indy,

I used a mix that I got from my local butcher shop, I wanted to figure out how to make it before I started playing around with recipes. This is a flavor mix that uses pink cure #1 along with the spices. The only thing I don't like about it is that it uses MSG, but oh well! Now that I know I can do it, I am going to start playing around with recipes that have been posted on here....
