I plan on doing three 3 lb summer sausages this weekend. Is there much variation in temperature in different parts of the tower? Is there going to be much temperature difference in each of the sausages? I have 2 probes, one for the tower and one for in one of the sausages. What would be the best place to place it in the sausage? I have done just one a couple of weekends ago and it turned out great. I had placed the probe in th top of the sausage and took it out at 152 F. I was wondering what difference 3 sausages would make temperature wise.

Welcome Johnny. I have only done SS one time. Had four links in the OBS. I just put my temp probe in the center link in the center of the cabinet. They all came out great.
I recently did 5 3lb old fashion bologna and two were done at the same time, then one, then the other two.
If you have an instant read thermo, use that for a final IT check.
