Title: How long can you marinate ribs?
Post by: strawboss on December 25, 2010, 08:26:59 PM
I have some spare ribs that have been in the fridge marinating in mustard and a dry rub since Thursday night.
I planned on smoking them Friday but some plans changed and I had to leave town.  Will they still be good to smoke on Sunday morning?

thanks

Could be the best you ever had, but I'm not the food police. I have done worse in a "senior moment" and still cooked it cause if it passes the "sniff" test and I smell my spices and nothing else, it's good to go. You did have it tightly wrapped in saran wrap or something right???

As long as they pass the smell test, go for it.

welcome to the forum Straw, i have seasoned a brisket on Monday and smoked it on a Friday night and everything  came out tender and delicious , i would also say that  situations like this is called  AGING THE MEAT. which makes it more tender and flavorful

enjoy.
